I'd discharge battery to 50% and not plug it in. Either way not likely a big deal. However, two months is a long time. You'd probably want to run the engine a bit just to keep everything lubricated.

The Li-Ion battery can hold the charge for years, so it has no problems. The gas engine should be run at least once a month, and the 12 VDC lead-acid battery in the trunk will lose its charge, so powering the Volt at least once a month will recharge it (or get a battery keeper).

I second connecting the 12V battery to a maintainer/keeper/automatic charger. (do not use a "manual" charger).
And that's also what the manual says.
