Am looking for data that is showing % Charge (or kWH) versus time when charging at either 240 Volt (EVSE) or 208 V (Charging station). Starting from 0 mile EV Range. Anyone want to share their data or at least point some links that I can review?

A gen 2 will pretty much pull the max of either 16A or 3.8KW (at inlet) continuously till nearly full. Charging is in constant current mode, until near the end. At 240VAC, that's 15.8A, 3.8KW in, with 3.6KW to battery plus climate conditioning needs. At 208VAC, that's 3.3KW in, 3.1KW to battery plus conditioning. An EVSE that signals 15A max may cause Volt to drop to lower levels. There are some periodic pauses in full charging (maybe due to cell balancing/monitoring), once an hour IIRC.

Plugged our 2017 Volt in last night with 0 EV range at 9:30 PM. Got the "charging completed" e-mail notification from on-star at 2:42 AM. This is off the stock charger plugged into 240 via an adapter.

Someone posted a graph here recently of what you're asking for that they'd generated from a Sense device.

If you want SIMPLE, I think there are 10 segments to the battery charge indication on the dash.... Divide the time it takes to actually charge the car. I think the 120 at 8 am is 13 hours??? so 1.3 hours per segment. Just figure for all three settings of charging. 120 8 amp 120 at 12 amp and 220v ac. multiply the number (1.3 for example) by the number of segments out and you will have a reasonable guess to charge time.
