How can I change the volume of navigation voice prompts when using CarPlay with iPhone?
It seems to stay constant whether I increase or decrease music volume.
It's a bit too low now, kind of soft in comparison to music and ambient high speed highway noise.

Turn the volume knob up (or down) While the voice prompts are playing.

I had (have) the same issue with mine. The carplay voice prompts are low volume, and the system doesn't mute the music as it is supposed to. This is an intermittent problem, and sometimes it works perfectly. I don't know the answer, but I did find a workaround. I have found that if the nav voice prompt isn't muting the music, all I have to do is push the voice prompt button on the steering wheel. Siri then mutes the music awaiting my command. I just stay silent, Siri eventually goes away, and from that point the nav voice prompts are loud and clear.

Yes, turn on voice navigation and you can adjust the volume while the voice navigation is actively announcing the next turn. I have not seen this documented anywhere but if you miss hearing/understanding a voice navigation announcement touching the speaker icon that appears at the top left of the Apple Maps CarPlay screen will cause Apple Maps to repeat the last announcement.
